How are the Formal Portraits Shot ?

The example you posted seems, judging by the glint in the eye, to use a big softbox just behind the photographer. On the backdrop (calumet has a nice range of those as well) there's a secondary light source possibly with a colour gel. That and good exposure and whitebalance is everything really.
